Officially appointed ‘Ambassador of Irish Food’, and recipient of the only Michelin Star awarded in the West of Ireland, JP McMahon is the culinary director of the EatGalway Restaurant Group, which combines the efforts of his three restaurants,EAT Gastropub, Cava Bodega and Michelin-starred, Aniar. Committed to sound ethics when it comes to sourcing ingredients and supporting small-scale producers, McMahon is a self-prescribed ‘obsessive educationalist’ with a penchant for both food and academics.
As the current chairperson of the Galway Food Festival, McMahon’s talent and ambitions are integral in shaping the contemporary culinary landscape in the coastal metropolis of Galway, Ireland. Currently completing a PhD in Art History together with three celebrated restaurants operating under his culinary and creative direction, he maintains an active role as a community leader in the education of all things culinary with renowned passion and purpose. With integrity as his key objective, McMahon places considerable focus on supporting the local infrastructure and enabling its supply chain so that future generations can experience the virtues of their culinary heritage and the abundance of the local terroir.
