Since the opening of Chef Andre Chiang’s restaurant in late 2010, Restaurant Andre has achieved the pinnacle of status for the Singapore culinary scene. Ranked #1 in the city-state, #5 in Asia, and #38 in the world, Chiang was quick to make his mark as a young, dynamic culinary force on the global food scene.
Listed as one of Asia’s Top 10 Young Chefs, and armed with a resume that boasts notable job titles at various Michelin-starred restaurants, Chiang credits his immediate influences to the iconic flag bearers of “Nouvelle Cuisine.” A fierce advocate for using only the freshest of seasonal produce, he draws inspiration from his experiences working at top French restaurants in conjunction with his discriminating eye for selecting the products, best in quality and freshness, to design his daily menu.
True to his culinary roots in the south of France, Chiang has transcribed the eight key elements that reflect those influences and coined his own ‘Octaphilosophy’. The elements – “unique, texture, memory, pure, terroir, salt, south, and artisan,” are parlayed into Chiang’s cooking on the principles of how our capacity to taste food is influenced by our personal memories. The ultimate goal is to deliver “flavours and textures that engage the senses.”
